Awesome eggplant parmesan! Serves about 4.
INGREDIENTS

1 eggplant, peeled and thinly sliced
2 eggs, beaten
1 1/2 cups bread crumbs
1 can tomato basil spaghetti sauce
1/2 (16 ounce) package mozzarella cheese, shredded
1 cup grated Parmesan cheese
1/8 teaspoon dried (or fresh) basil
