Miso soup is a quick and easy meal to prepare. I have created this alternate version from the traditional miso soup recipe and it turned out pretty damn good.
Ingredients:
- Miso Paste (red)
- Portabella Mushrooms
- Hard Tofu
- Green Onions
- Vegetable Broth
- Soy Sauce
Directions:
- In a pan bring 4 cups of water, and 1 cup of vegetable broth to a boil.
- Add in chopped mushrooms. Let boil for a few minutes…reduce heat to a simmer.
- In a bowl mix together about 4tbs of miso paste with 2 tbs of soy sauce, then add it to the soup and mix well (add more miso paste for a more salty taste).
- Add in the tofu and green onions.
At this point the soup is ready but i prefer to let everything sit for a while under a low heat so the juices from the veggies distribute.
